We want to show you how we incorporate carrots into one of our favorite recipes with healthy alternatives to using butter and oil in your baked goods. We love to use applesauce, Greek yogurt or bananas instead of oil to add natural moisture.

Try our Carrot craisin muffins… one of our mainstay favorites for brunch or to accompany salads.

Recipe:

2 cups flour (unbleached or whole wheat)

2 Tsp. baking soda

2 Tsp. cinnamon

1/4 salt

1/2 cup organic cane sugar

1/2 cup brown sugar

6 medium carrots (or 2 cups)

1 1/4 cup craisins

3 large eggs

1/2 cup oil

1/2 cup non-fat Greek yogurt

2 tsp. vanilla

1 large granny smith apple, shredded

Set oven to 350 degrees.  Grease 18 muffin cups.  Sift together flour, baking soda, cinnamon and salt, then add in both sugars.  Coarsely chop carrots to measure 2 cups packed.  Add in the carrots and raisins to the flour mixture, toss well to combine.  Whisk together eggs, oil and vanilla. Add in the shredded apple to the egg mixture and then add to the flour mixture until just combined.  Fill muffin tins three-quarters full and bake for about 15-20 minutes. DSC_0611
