Below is a delicious and healthy stir fry and fried rice recipe that is the perfect dish to serve any time of the year! Stir frying is a very quick and easy style of cooking; and so many different meats, vegetables and nuts can be used!
Stir Fry
- 2 Tb Olive Oil or Sesame Oil
- 1 Small Onion Diced
- 3 Cloves of Garlic
- 1 Tb Ginger Diced
- 1 Cup Broccoli Florets
- 5 Medium Carrots Julienned
- 5 Celery Sticks Julienned
- 14 oz. Can of Baby Corn
- 6 oz. Can of Water Chestnuts
- 1 Bell Pepper Julienned
- 2 lbs Boneless Skinless Chicken Breasts- Small Strips
- ½ Cup Cashews
Sauce
- 1 Tb Cornstarch
- 1 Tb Hot Water
- ½ Cup Soy Sauce
- Salt and Pepper to Taste
- Red Pepper Flakes (optional)
Directions
- Mise en place all vegetables and chicken.
- Season chicken with salt, pepper and ginger.
- Put 1 Tb oil in the wok and heat.
- Once hot cook onion, garlic and ginger- about 1 minute.
- Place all other vegetables in wok and stir-fry- about 5 minutes, season with salt/ pepper.
- Remove all vegetables and cover in bowl.
- Add 1 Tb. Oil in pan and add seasoned chicken.
- Stir-fry chicken until cooked- about 6 minutes.
- Return all vegetables to Wok and add in the sauce to the middle of the Wok.
- Add in Cashews and serve over Fried Rice.
Fried Rice
- 2 Tb Sesame Oil
- ½ Bell Pepper Diced
- ½ Cup Peas
- 2 eggs
- 1 ½ Cups Long Grain Rice Cooked
- 2 Tb Soy sauce
- salt/ pepper to taste
